Baked Garlic Parmesan Chicken

Swiped this recipe from cakescottage.com because her mobile website doesn't look so great on my phone. It's the best!

INGREDIENTS:
½ cup Mayonnaise
½ cup shredded Parmesan cheese
4 boneless skinless chicken breast cutlets.
4-5 teaspoons Italian seasoned dry bread crumbs
½ teaspoon garlic powder
pinch of salt
½ teaspoon lemon pepper

DIRECTIONS:
Preheat oven to 400 degrees F.

In a small bowl combine mayo, garlic powder, and parmesan cheese.

Moisten chicken breasts with water and lay on baking sheet (I line my baking sheet with parchment paper to make clean up easy)

Divide the mayonnaise mixture evenly among the chicken, just spreading it across the top of each piece, and sprinkle with salt and pepper to taste.

Bake for 15-20 minutes, remove from oven and sprinkle bread crumbs on each piece of chicken.

Return to oven and bake for additional 20 minutes or until chicken is cooked thoroughly and juices run clear.

Tops will be browned and chicken will be incredibly juicy.

You can also finish them off under the broiler for a minute or two to get them extra browned on top.

Soft Pumpkin Chocolate Chip Cookies

We love this recipe so much! I stole it from A Family Feast. Their website doesn't look good on my phone (very hard to read) so I am adding it to my blog because I definitely don't want to lose this recipe!

INGREDIENTS:
1 cup pumpkin puree
1 cup granulated sugar
½ cup oil (canola or vegetable)
1 teaspoon vanilla
1 large egg
2 cups flour
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon milk
1 cup semi-sweet chocolate chips
1 cup chopped walnuts (optional but highly recommended)

DIRECTIONS:
Preheat oven to 375 degrees. Line cookie sheets with parchment paper sheets (or lightly grease the cookie sheet if you don’t have parchment paper).

In the bowl of a stand mixer, combine pumpkin, sugar, oil, vanilla and egg. Mix until well combined.

In a separate bowl, stir together the flour, baking powder, cinnamon and salt. In a small bowl, dissolve the baking soda with the milk. Add both the dry flour mixture and the wet baking soda mixture to the pumpkin mixture.

Mix well.

Add in the chocolate chips and nuts and stir until evenly combined.

Using a medium cookie scoop(medium scoop is equal to 1½ tablespoons), drop mounds of the cookie dough on the prepared cookie sheets.

Bake for 10 to 12 minutes. Allow the cookies to cool for slightly before removing to a wire rack to cool completely.

Makes about 3 dozen :)

White Chicken Chili

Also swiped this recipe from my friend's wife. It is sooooo yummy!

INGREDIENTS:
1 pkg of chicken breast (2.7 lbs)
1 Carton of Chicken Broth (32 oz)
2 packets of McCormick White Chicken Chili Seasoning
1 can of cream style white corn (can substitute with any kind of corn)
1 can of Northern Beans (can substitute with any kind of beans)
2 Small cans of Diced Chilies (4 oz each)

DIRECTIONS:
1. Place chicken in the bottom of the crockpot
2. Pour corn, beans, and chili on top.
3. Pour the chicken broth over it
4. Sprinkle the white chicken chili seasoning over it and stir
5. Let it sit for 3 hours on high and 6 hours on low

Cinnamon Pancakes

Swiped this recipe from my friend's wife. I've never met her but she seems pretty awesome. She has mad photography skills, and she's an excellent wife, mother, and chef. These pancakes are dang delicious!

Ingredients:
1 1/4 cups all-purpose flour
1 1/2 tablespoons white sugar
1 tablespoon baking powder
2 teaspoons ground cinnamon
3/4 teaspoon salt
1 1/3 cups milk
1 egg, lightly beaten
3 tablespoons vegetable oil
1 teaspoon vanilla extract

Directions:
Whisk flour, sugar, baking powder, cinnamon, and salt together in a bowl.

Then, add in the milk, egg, vegetable oil, and vanilla and stir until only a few lumps remain.

Let the batter stand for 5 minutes for extra fluffiness. (THIS IS A MUST!!)

Heat your skillet (I put mine at 350 degrees) and pour batter on in 1/3 cup portions.

Cook until the bottom is brown and then flip, cook until the other side is brown as well. I like to butter while warm and serve :)

Six Sisters' Stuff: Honey Lime Chicken Enchiladas

When Chris had his appendectomy, his cousin and his wife brought us these. They are the best! I begged her for the recipe and she told me it comes from Six Sisters' Stuff. Their mobile website isn't working and since I'm NOT going to lose this recipe I am posting it here.

MARINADE:
6 T honey
5 T lime juice
1 T chili powder
1/2 t garlic powder

ENCHILADAS:
1 lb chicken cooked and shredded (about 4 chicken breasts)
8-10 flour tortillas
1 lb Monterrey Jack cheese, shredded
16 oz green enchilada sauce
1 c heavy cream

DIRECTIONS:
Whisk the first four ingredients and toss with shredded chicken in a Ziplock.

Let it marinate in the fridge for at least half an hour but preferable a half day or so.

Pour about 1/2 c enchilada sauce on the bottom of a 9x13 pan.

Fill the tortillas with chicken and a little bit of shredded cheese.

Roll them up and put them in the pan.

Add rest of the marinade to the enchilada sauce and mix in heavy cream (if you don't have heavy cream you can easily make some using 2/3 cup milk and 1/3 cup melted butter).

Pour mixture over tortillas and then cover the enchiladas with cheese.

Bake at 350 degrees for 30 minutes until cheese is melted.


Cream Cheese Chicken Taquitos

Lindsay gave me this recipe from her SIL Mandi the other day and they are divine. Chris has always hated corn tortillas and taquitos but he LOVES these! They are absolutely fantastic :)

INGREDIENTS:
1/3 cup cream cheese
1/4 cup salsa
1 T lime juice
1 t chili powder
1/2 t cumin
1/2 t onion powder
1/4 t garlic powder
3 T cilantro
2 T green onions
2 cups cooked chicken
1 cup grated pepperjack cheese

DIRECTIONS:
Mix ingredients together and roll into corn tortillas.

Brush with olive oil then sprinkle salt.

Bake at 425 degrees and bake for 15-20 minutes.

Michelle's Pumpkin Chocolate Chip Cookies

This recipe came from my sweet friend (Michelle's) mother and I will always cherish it. When Michelle first made these cookies for us, we wiped them out like it was the end of the world :) We love them!

Ingredients:
½ c butter
1 ½ c sugar
1 egg
2 ½ c flour
1 t baking soda
1 t baking powder
1 t nutmeg
1 t cinnamon
¼ t salt
1 cup pumpkin
1 t vanilla
1 pkg. chocolate chips

Directions:
Preheat the oven to 350 degrees.

Cream butter, sugar, and eggs in mixer then add pumpkin.

Finally, add dry ingredients, vanilla , and chocolate chips.

Bake in the oven for 12 minutes.
