Six Sisters' Stuff: Honey Lime Chicken Enchiladas

When Chris had his appendectomy, his cousin and his wife brought us these. They are the best! I begged her for the recipe and she told me it comes from Six Sisters' Stuff. Their mobile website isn't working and since I'm NOT going to lose this recipe I am posting it here.

MARINADE:
6 T honey
5 T lime juice
1 T chili powder
1/2 t garlic powder

ENCHILADAS:
1 lb chicken cooked and shredded (about 4 chicken breasts)
8-10 flour tortillas
1 lb Monterrey Jack cheese, shredded
16 oz green enchilada sauce
1 c heavy cream

DIRECTIONS:
Whisk the first four ingredients and toss with shredded chicken in a Ziplock.

Let it marinate in the fridge for at least half an hour but preferable a half day or so.

Pour about 1/2 c enchilada sauce on the bottom of a 9x13 pan.

Fill the tortillas with chicken and a little bit of shredded cheese.

Roll them up and put them in the pan.

Add rest of the marinade to the enchilada sauce and mix in heavy cream (if you don't have heavy cream you can easily make some using 2/3 cup milk and 1/3 cup melted butter).

Pour mixture over tortillas and then cover the enchiladas with cheese.

Bake at 350 degrees for 30 minutes until cheese is melted.


Cream Cheese Chicken Taquitos

Lindsay gave me this recipe from her SIL Mandi the other day and they are divine. Chris has always hated corn tortillas and taquitos but he LOVES these! They are absolutely fantastic :)

INGREDIENTS:
1/3 cup cream cheese
1/4 cup salsa
1 T lime juice
1 t chili powder
1/2 t cumin
1/2 t onion powder
1/4 t garlic powder
3 T cilantro
2 T green onions
2 cups cooked chicken
1 cup grated pepperjack cheese

DIRECTIONS:
Mix ingredients together and roll into corn tortillas.

Brush with olive oil then sprinkle salt.

Bake at 425 degrees and bake for 15-20 minutes.

Michelle's Pumpkin Chocolate Chip Cookies

This recipe came from my sweet friend (Michelle's) mother and I will always cherish it. When Michelle first made these cookies for us, we wiped them out like it was the end of the world :) We love them!

Ingredients:
½ c butter
1 ½ c sugar
1 egg
2 ½ c flour
1 t baking soda
1 t baking powder
1 t nutmeg
1 t cinnamon
¼ t salt
1 cup pumpkin
1 t vanilla
1 pkg. chocolate chips

Directions:
Preheat the oven to 350 degrees.

Cream butter, sugar, and eggs in mixer then add pumpkin.

Finally, add dry ingredients, vanilla , and chocolate chips.

Bake in the oven for 12 minutes.

Bishop Grant's Mission Crepes (French Pancakes)

My bishop who was also my professor at BYU-I and also a good friend of my parents makes these delightful crepes. I love this recipe because it makes quite a few :)

Bishop Grant’s Mission Crepes (French Pancakes)

INGREDIENTS:
1 ½ c flour
1 T sugar
½ t baking powder
½ t salt
2 c milk
2 eggs
½ t vanilla
2 T vegetable oil

DIRECTIONS:
1) Measure flour, sugar, baking powder and salt into a bowl.

2) Stir in remaining ingredients. Beat until smooth. . . get all the lumps out.

3) For each crepe, lightly butter or spray skillet/griddle; heat over medium heat. Pour batter into pan so that it lightly covers pan.

4) Spread thin with the back side of a spoon in circular motion. Cook until light brown - not crispy brown, then turn.

Makes 12 8-in crepes. We usually double this recipe for our family of 7. And we rarely have leftovers!

Kimmee's Fantastic Pizza Crust & Pizza Seasoning

We are big on pizza in this house so I'm glad to have discovered a great recipe for the crust! Our sweet friends introduced us to this recipe and I can't wait to try it so I am recording it mainly for my own reference.

INGREDIENTS:
2 c bread flour
1 T butter, softened
1 T sugar
1 t salt
1 t active dry yeast
1/2 c + 2 T water (add more if necessary)

DIRECTIONS:
1) Add ingredients in order specified by your bread machine.

2) Set on dough setting (around 90 minutes).

3) Heat oven to 400 degrees.

4) Roll dough out.

5) Top with sauce and toppings.

6) Bake for 18-25 minutes.



My friend used Costco pepperoni, pizza seasoning, and parmesan cheese on her pizza crust and it was fabulous! I could find Pizza Seasoning in stores though so I'm also including a homemade version.

Pizza Seasoning
This recipe will sprinkle about 2 pizzas. (or one slice if you’re me)

INGREDIENTS:
1 tsp. Italian seasoning
1 tsp. sea salt
1/2 tsp. garlic powder
1/2 tsp. red pepper flakes (or 1 tsp., depending on personal taste)
1/4 tsp. pepper
1/4 tsp. paprika
1/4 tsp. onion powder (optional)

Broccoli Cheese Soup

This reminds me of Panera Bread's Broccoli Cheese soup but it's loaded with more veggies I think. We love this soup and stole this recipe from Lulu the Baker.

INGREDIENTS:
2 Tablespoons butter
1/2 cup chopped onion
1 cup finely chopped carrot
1 celery stick, finely chopped
1 Tablespoon minced garlic
4 cups chicken broth
2 large baking potatoes, peeled and chopped
1 Tablespoon flour
1/2 cup water
2/3 cup milk
2 cups chopped broccoli
2 heaping cups shredded cheddar cheese

DIRECTIONS:
Melt the butter in a large soup pot.

Add onions, carrots, and celery and saute over medium heat until tender.

Add garlic and cook 1 or 2 additional minutes.

Add chicken broth and potatoes, bring to a boil, and cook until potatoes are tender.

Mix flour with water, add, and simmer until soup is slightly thickened.

Add milk and broccoli and cook until broccoli is just tender and soup is heated through.

Stir in cheese, allow to melt, and serve.

Instant Chocolate Pudding

Yet another stolen recipe. This time from betterwithcake.com. Apparently she fed this to someone who HATES avocados and they loved it so those avocados are easily disguised :) I changed this recipe to non-healthy. I'm not afraid of sugar :) She uses Stevia and Maple Syrup and I tried it that way but I wasn't thrilled.

Healthy Homemade Instant Chocolate Pudding
Makes approximately 2 cups of pudding

Ingredients:
2 avocados
2 Tablespoons of cocoa powder
1 cup sugar
2 teaspoons of vanilla extract
a pinch of salt

Directions:
1) Slice your avocado in half and remove the pit.

2) Scoop out the flesh and place into your blender/food processor Of you dont have a food processor or blender you could just use your stand/hand held mixer)

3) Blend/pulse/whisk until smooth

4) Add cocoa powder, sugar, vanilla, and salt and blend/pulse/whisk again until smooth, glossy and well combined.

5) Taste and add extra sugar accordingly.

You can also spoon the mix into a Ziplock bag and snip off a corner to pipe into cute little cups which is what she did.
